Ugh, I have to say this is one of the most mediocre recipes I have ever tried. It tastes– hmmm– alright. I couldn’t come up with anything better, so I’m posting it anyway. Sorry, I guess.
April Fools! Haha, you should have seen the look on your face. I know that the holiday isn’t for a few days, but I just couldn’t resist. To make it up to you I’ll share this absolutely adorable prank baked potato recipe with you. You’re gonna love it!
So let me just delve into what I love about this recipe. You know how usually April Fool’s jokes are an unpleasant surprise? This prank baked potato is the absolute opposite.
Imagine this– you just finished dinner with your victim (heh heh). For dessert, you place in front of them a baked potato topped with sour cream, shredded cheddar cheese, chopped chives, and a generous pat of butter. As soon as they dig their fork in for a taste, something seems off. This is not a baked potato. “Take a bite,” you say deviously. Their face lights up as soon as the deliciousness hits their tongue.
It’s ice cream! That’s right, this baked potato is none other than vanilla ice cream coated with cocoa powder, then topped off with whipped cream (sour cream), colored coconut (shredded cheese), green sprinkles (chopped chives), and a lemon Starburst (butter). Excuse me while I squeal like a little girl. I just can’t get over how cute this recipe is. I just wanna tweak it’s little potato cheeks. It’s right up there with teacup piglets on the cuteness chart.
And the flavor? Yum. The cocoa powder adds a nice chocolate flavor, while the whipped cream, coconut, and sprinkles add different textures to the equation. And don’t stop with my suggestions for toppings. Get creative and see what other sweet treats you can add that resemble baked potato toppings.
So Munch Love, but too little time? Try this hack. Say you want to go nuts and make these for the whole family. (Hats off to you!) You can make the potato part of this recipe ahead of time and add the toppings right before serving. Here’s how it’s done– shape your ice cream into a baked potato, then allow them to freeze until firm. Coat with cocoa powder, cut out the notch in the top to make space for the toppings. After that, place them back on that freezing cold baking sheet you had in the freezer, cover with plastic wrap, and hold them there until showtime. When you’re ready to serve, simply add the remaining toppings and dish it out. That’s it!

- 1 pint vanilla ice cream
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- ¼ teaspoon water
- yellow food coloring
- ¼ cup sweetened shredded coconut
- ⅔ cup cocoa powder, well sifted
- 1 tablespoon long green sprinkles
- 4 lemon flavored Starburst candies, removed from their wrappers
- Measure ¾ cup of ice cream and place it on a piece of plastic wrap. Wrap the plastic around the ice cream and shape it into a potato. Place on a cookie sheet in the freezer, then repeat the steps to make 3 more potato-shaped pieces of ice cream. Allow to freeze for at least 4 hours.
- While the ice cream potatoes are becoming firm in the freezer, make the whipped cream. Place the heavy cream and powdered sugar in a medium bowl and beat with an electric mixer until soft peaks form. This will be the sour cream for the baked potato. Set aside in the refrigerator until needed.
- In a small bowl, stir together the ¼ teaspoon water with 8 drops of yellow food coloring. Add the shredded coconut and stir with a fork until the coconut is uniformly colored. Now you have your fake shredded cheese for the baked potato.
- After the ice cream potatoes are firmly frozen, place the cocoa powder in a large bowl. Add the ice cream potatoes, one at a time to the bowl and coat evenly with cocoa powder. Shake any excess cocoa powder from the ice cream. Be sure to remove as much of the cocoa as possible, then place on a plate. Repeat with the other ice cream pieces.
- Cut a notch out of the top of the ice cream to make it look like a cut baked potato ready for toppings. Add 2 tablespoons of whipped cream to each potato, then top with an even amount of coconut and green sprinkles (these look like little chopped chives). Add a lemon Starburst (slice of butter) to the top of each baked potato. Serve immediately.
